NOT EXACTLY a common way to greet friends in this heck of the woods, it is, for the Pennsylvania Dutch folk, a part of their celebrating of Shrove Tuesday, or Fast-naug- ht Day. But the most integral part of : this special day is the making, sharing and eating of (doughnuts). Fast-naugh- ts ACCORDING to Pennsylvania Dutch tradition, if you don't eat a fastnaught on Shrove Tuesday you should be very careful during the forthcoming year. Tradition has it that eating a doughnut on this special day affords one protection from harm, accidents or all during the day. And not wanting any unfortunate accidents to befall her friends, Holly does what all good Pennsylvania Dutch do on this special day. Like her mother and grandmother before her, she bakes dozens of heaven-knows-wh- doughnuts and presents plates-fu- ll of them to friends and neighbors, even driving to surrounding communities, Syracuse, West Point, Layton and Ogden, to ensure them a safe year. BEGINNING her Fastnaught Day activities the day before by mixing the dough, will be fortified with their delicious protection for another year. What else do the Pennsylvania Dutch do on Fastnaught Day? Nothing, according to Holly. The entire day is devoted to this activity. In fact, in the small Pennsylvania Dutch communities located in the eastern section of the country, Shrove Tuesday is a day of joyous celebration with the entire community having the day off from ordinary activities in order to help make and feast on fastnaughts. They are consumed throughout the day, almost to the exclusion of all other foods. ALL OF the doughnuts made on that day, are, by tradition, supposed to be eaten on that day, Holly said. If you have a friend or relative who doesnt or cant make them, you take them some so they will have a safe life until next Shrove Tuesday. For those who are not familiar with Shrove Tuesday, it is the day before Ash Wednesday, the start of Lent. Although it is traditionally celebrated March 10, because of unavoidable commitments on that day, Holly and her family celebrated the day a month early this year. WHILE IT is a day celebrated most enthusiastically by the Pennsylvania Dutch, it is, for many cultures a reli fastnaught gious day of feasting and rejoicing before the long fasting weeks of Lent. Shrove Tuesday is known by several other names, depending on where you live. We really enjoy this day, reports Holly. It is so much fun to give the doughnuts to friends. We dont even fix meals that day, she said. If anybody is hungry they just eat another doughnut. THE DAY after Shrove Tuesday is Ash Wednesday and on this day the Pennsylvania Dutch make up for their "doughnut gluttony by giving up eating a particular food for 40 days. What do they give up? You guessed it. Doughnuts! Holly reports that this year she made over 450 doughnuts. To make this astounding amount, she used 25 pounds of flour, five pounds of sugar, and eight pounds of powdered sugar. Her daughters, Promis and Misty, frosted and glazed the doughnuts with the powdered sugar. SHE MAKES doughnuts of all sizes and glazed, sugared and filled centers. Some are ordinary round ones with holes in the center while others are square and minus the hole as were the traditional fastnaughts. Following is Holly's doughnut recipe. Better fry up a batch. Add powdered sugar, a pinch of salt and 3 tablespoons soft butter, 3 teaspoons vanilla and a little milk. Roll to one-hainch thickness and cut. Cover and raise until double. lf FRY LN very hot oil, turning once when underside is light brown; about three minutes on each side. When doughnuts are cooled, shake in baggie with granulated sugar, sugar and cinnamon or powdered sugar. Or frost or glaze with the following recipes. CHOCOLATE FROSTING Three tablespoons cocoa 'h cups water (room temp.) 4 Tbls. soft butter 1 lb. box powdered sugar pinch of salt 4 tsp vanilla 1 . THIS IS a very thin glaze. Add powdered sugar gradually, you may not need the entire box. Doughnuts should be warm when you dip in glaze. Put on racks to cool. CINNAMON ROLLS Use doughnut recipe. Let raise. Roll out dough to 'h inch thickness. Cover with sugar, sprinkle with cinnamon and top with raisins. Roll up and cut one inch slices. Lay on cookie sheet and let raise about an hour. Bake at 375 degrees about 20 minutes.
