Show January 16, 1970 THE EUREKA (UTAH) REPORTER at Heart Club announces now slate of officers for 1970 Senior Citizens Young at Heart Club met last Wednesday afternoon in the Memorial The Building. meeting was opened by President James Toone and the opening prayer was given by Georgia Laird. Vice president, Lorin Thompson, led the salute to the flag, and the God Bless members sang America," led by Bessie Toone. Minutes of the last meeting were read by Bessie Toone, in the absence of the secretary, Lilliail Finch, who is confined to the Payson Hospital. The members were happy to learn that she is considerably improved, and should be released from the hospital in the near future. "Happy Birthday" was sung to Julia Palmer. Two new members were welcomed into the club, Mr. and Mrs. Alvin Hansen. An election of officers was held, and Lorin Thompson was elected president, first vice president, Edgar Finch; second vice president, Sterl Laird Other officers will be elected at a later meeting. Mr. Tbone thanked the members for 'their support during his term of office, and Mrs. Myrtle Theriault responded and thanked Mr. Toone for his outstanding work during the year. She also spoke a few words of welcome to the new president, Mr. Thompson. Guest speaker, Alvin Anderson, field director for the southern part of the state, gave an excellent talk on Social Security, after which a question and answer period was held. This is part of the Educational Pro- gram instigated by Supt Blight and Fred Holliday. ' Legion Auxiliary met Monday evening in the Memorial Building, with Presi- dent Dorothy Allinson conducting. A regular business session was held, and a social hour was enjoyed with Bingo and "500" furnishing the evenings entertainment. The "500" prize was won by Della Berry and the Bingo, by Mildred Davis. Tasty refreshments were served by the hostesses for the meeting, Cleo Judge and Myrtle - Pett Birthday Club Mrs. Ted Johnson and Mrs. to Don Giles were ses the Birthday Club Friday evening at the Johnson home. The honored guests were Mrs. Irma Gourley and Mrs. Elaine Kirk. They were presented with lovely gifts by the members. Dinner was served at 6:30 and the evening was spent in pleasant visiting. Others attending were Mrs. Alliene Farren, Mrs. Dora Randle, Mrs. Thelda Eastwood and : ; ' j ! j ' Schmidt Miners Auxiliary Miners Union Hall. The meeting was called to order by President Donna Paxman. Hie newly elected officers were installed and three letters were read from some of the boys over seas who received goodie bags for Christmas. Eight bags were sent to the service men. FLOUNDER AND HORSERADISH SAUCE 2 cups water 4 onion slices 1 carrot 2 sprigs parsley 1 1-- 12 tablespoon Fleischmann's Margarine 4 teaspoons flour to 2 tablespoons horseradish, drained 1 bay leaf 1-- 12 Combine water, onion, carrot, parsley, bay leaf and salt; simmer 10 minutes. Roll fillets ana drop into stock. Simmer 2 minutes or until fish turns white and flakes easily. Remove from liquid; reserve 1 cup stock. Ada more water if 10-1- necessary. 2 teaspoons salt pounds fillet of floundeV Melt Fleischmann's Margarine; stir in flour until well blended. Gradually add reserved fish stock, stirring constantly. Simmer 10 minutes or until liquid is of sauco consistency. Remove from heat and stir in horseradish. If desired, garnish fish with parsley and sprinkle sauce with paprika.
