As the dessert Is to be a cold pne. It may be well to prepare that first. Scald a pint of milk In a double boiler. Mix together three tablespoonfuls of a teaof corn starch and one-ha- lf cold sufficient with of salt spoonful milk to make a thin paste, turn It quickly into the hot milk and atir until thickened, then cover and cook for forty minutes. Beat the yolk of two of a cupful of eggs with one-thimixture and cooked add the sugar, stir occasionally for five minutes, then add the whites beaten to a stiff froth and stir up well from the bottom. Cook three minutes more, then take from the fire and ad one tablespoonful of lemon Juice and one-ha- lf teaspoonful of vanilla. Have ready a pretty mould dipped in cold water and the bottom lined Put in with large strawberries. enough of the corn starch to cover the berries and lay more berries around the sides as the remainder is turned in. Set away in a cold place. Pare, wash, boll and mash sufficient potatoes to measure three cupfuls. Add to them salt and pepper to taste, one teaspoonful of onion juice, one table spoonful of finely chopped parsley, one tablespoonful of butter, two tablespoon fuls of cream, the yolks of two and the white of one egg, beaten together. Put into a clean saucepan and stir over the fire until the mixture leaves the sides clean and can be formed in a big ball. Set aside until sufficiently cooled to handle, then shape into croquettes cones, cylinders or balls. Beat the reserved white with one teaspoon ful of warm water. Just enough to break the strlnglness. Dip each croquette in this, then in fine dry crumbs, and Just before the dinner is served fry in smoking hot them golden-brow- n fat. of sufficient depth to Immerse them. Drain for a moment on soft paper and pile on a low or flat dish. A tail piece weighing from three to four pounds Is the best cut to have from a halibut or from a large cod. If the former, pour a little boiling water over the under back skin and scrape it well, then wash quickly In cold water. Conk together for twenty minutes one can of tomatoes, one cupful of water, one large onion, chopped, one green four pepper, seeded and chopped, cloves, half a bay leaf, one teaspoonful of SHlt and a dash of cayenne. Rub through a sieve. Mix together in clean saucepan one tablespoonful of butter and one tAblespoonful and a half of flour and gradually add the tomato, stirring until smooth; cook for five minutes and draw to the side of the fire. In a baking pan put a little of the sauce; on this lay the flsh and pour over it a cupful more. Place in a hot oven and bnste every ten minutes with a little of the sauce. About fifteen minutes to the pound will be needed; when done, the flesh will draw away from the bones. Serve on a platter garnished with parsley and sliced lemon and pass the sauce separately. A small bunch of asparagus will be needed for the soup. Scrape each rd stalk, cut off the tender tips and cut h lengths.
