Show 4 THE CITIZEN THURSDAY. APRIL 10, 1075 Benson Folks Attend Wedding Reception by Alice S.Cardon Benson Randy Johnson and Beverly Page were married on Friday, April 4. Randy is the son of Bernice and Howard Johnson, and Beverly is the daughter of Mr. and Mrs. Garth Clark Page. Beverly attended Logan High School and Seminary and is present- ly employed at Holiday ORFA SMITH. BENSON, serves as this week's Cook of the Week, sharing with us, some of her familys favorite rrcipes. Her White Fruit Cake has been given to both friends and family all during the year as she always keeps a supply on hand in her freezer, just in case someone drops by." ottieWeeik Orfa Smith has been selected as Cook of the Week. One of her favorite recipes is for a fruit cake which she has shared with many of her friends and family, because she always has some frozen and handy in her freezer Orfa, along with her husband, Richard, moved to Benson from Tremonton some five years ago, where she had been teaching in the elementary school in Garland. They are the parents of five children: Joanne Weston of Moscow, Idaho; Marlene Larsen of Roy, Utah; Bettie Keeth of Malta, Idaho; Vernal Smith of Logan, Utah, and Terry R. Smith of Fort Wayne, Indiana. They have 19 grandchildren. Since moving to Benson, Orfa has been a Sunday School teacher, in the Relief Society presidency, and is currently teaching the Social Relations lesson in Relief Society, and is a visiting teacher. Orfa and Richard served in the South Florida Mission for the LDS Church from September 1972 to May 1974. They had both served in the Eastern States Mission in 1935 before they were married. Orfa enjoys crocheting, knitting and sewing. WHITE FRUIT CAKE pound butter cups sugar 6 egg yolks 4 cups flour .. l' ounce lemon extract 1 pound candied cherries 2 pound pineapple 1 pound bleached raisins 1 pound pecans 6 egg whites, stiffly beaten 1 2 Cream butter, sugar and add egg yolks. Add flour and lemon extract, then fold in stiffly beaten egg whites. Add floured fruits. Put a pan of water on the top shelf of oven. Place batter in paper-line- d (brown paper) ungreased loaf pans. Bake at 300 degrees for one hour 16 minutes. Reset oven at 350 degrees for seven minutes. Turn off oven and leave ior seven minutes longer. To store, wrap in cheese cloth soaked in fruit juice. Wrap in aluminum foil. Store in refrigerator or freeze. Delicious with whole wheat flour. WHOLE WHEAT BREAD Four Loaves 23 cups oil or brown sugar salt cups warm water 2 3 cup honey 2 Tablespoon 5 teaspoon soda teaspoon baking powder 7 cups flour Mix thoroughly in mixer. Add 2 Tablespoons yeast in 2 cup water. Add 5 to 6 cups flour. Mix thoroughly for 15 minutes in mixer. Let raise 60 minutes. Mold into pans. Let raise for 30 minutes. Bake at 350 degrees for 45 minutes to 1 hour. 1 1 WHOLE WHEAT MUFFINS cup butter 2 cup brown sugar 1 egg 2 cups whole wheat flour 1 teaspoon soda 1 cup milk 1 cup nuts (optional) Cream butter and sugar. Add egg. add milk and flour alternately. Put in muffin tins. Bake 425 degrees for 12 to 15 minutes. 2 GONE WITH THE WIND small package of cherry jello cup boiling water 2 can evaporated milk '2 cup miniature marshmallows 2 cup crushed pineapple and juice 10 crushed graham crackers 4 cup butter. Mix jello in boiling water and chill until partially set. Whip evaporated milk. Put in ice cube tray and chill. Melt butter and crush graham crackers. Press into pie tin. Cut marshmallows into small pieces. Remove jello and whipped milk from frig. Whip together at top speed until mixture starts to thicken. Fold in pineapple and marshmallows and pour into pie shell. Return to refrigerator and set until firm. May be garnished with whipped cream and nuts. 1 1 STRAWBERRY DESSERT I ' Crust: 10 crushed graham crackers cup melted butter Press into bottom of pan (approximately 8" x 12") Cream Filling: 1 four ounce package cream cheese '? cup powdered sugar 1 package dream whip (prepared as directed) Mix cream cheese and powdered sugar together, then add iiiUlui,. ..:! j Hrnm whip. Spread over crust. Topping (SlrawueiT) . 1 package strawberry danish dessert ( prepare as directed for pie filling, 14 cups water) Add 3 cups fresh sliced strawberries. Put on top of cream filling. Chill 4 to 5 hours. Frozen strawberries or raspberries may be used. House Motel. Randy is a graduate of Sky View High School and Seminary and is employed at LeGrand Johnson Construction Co. Beverly and Randy were honored at a wedding reception at the Holiday Room of the Holiday House Motel on Friday evening following their marriage. They will make their home in Logan. Ruby and Roy Rees entertained at a birthday dinner in honor of their son. Perry on Saturday, March 29. Also present were Perrys wife and children; Cloteele and Max Dahle and children; Colene and Eldon Johnson and family; Mr. and Mrs. Rees and Rex. The children of the ward, under the direction of Pris, mary president, Connie presented the program at Sacrament meeting on Sunday evening. Many of the children had speaking parts, and they all joined in and Sea-mon- their family. At Sacrament meeting on Sunday, Bruce Snow, son of Anna Mae and Frank Snow; Terry and Larry Maughan, sons of LaRee and Calvin Maughan, were presented to be advanced in the Aaronic Priesthood from the office of Teacher to that of a Priest. On Friday evening, Orfa and Richard Smith had several of their family members home for a family dinner. Those present included their daughter, Jeanne and Bryan Weston and two children of Idaho who had Moscow, come to attend general conference in Salt Lake City. (Bryan is in the stake presidency and Jeanne is in the stake Primary of their stake). Their daughter, Mar Newton A family dinner was held at the home of LeOra and Ora Jenkins of Newton for family members after the confirmation of their grandchildren at Sacrament meeting. Those who enjoyed this occasion were the grandparents, LeOra and Ora. Reed and Vickey Jenkins and four children, Dianne and Jerry Jenkins and three children, Gordon and Mary Jenkins and family of Salt Lake City; Mr. and Mrs. Owen Despain, Mr. and Mrs. Kent Despain and Mr. and Mrs. Doug Despain, all of Logan. Newton Ward Relief Soci- ety was held on Tuesday with LaWana Larsen, president, conducting. The Spiritual Living lesson was presented by Helen Rigby. She was assisted by Nancy Griffin and Darlene Benson. Verla Summers recommended everyone to be present for homemaking day to partici- pate in mini-course- s. Newton Ward Sacrament meeting was held on Sunday with Jay G. Rigby conducting. He read the membership for Debra O. Anderson. He released Marlow Viehweg as a Sunday School teacher and sustained Norvel Jones. He welcomed the Fred and Pat Martin family back to Newton from Kansas where they have been living for the past nine months while he is in the U. S. service. The Newton mens chorus sang two numbers and Kenneth Roe of Smithfield spoke. The Newton men's chorus sang two more numbers. A large crowd of ward members and visitors were in attendance. Newton Literary Club was held at the home of Eunice T. Cooley on Thursday. As president she conducted the meeting. Secretary, Sharron Maughan read the minutes. The program was presented under the direction of the Senior Citizen committee, O.W. and Constance Hyde. They told of their travels to all states in the United States and South America and Hong Kong and told of our heritage. Musical numbers with duets and solos depicting the Young Women's organiza- tion. Refreshments served. were The men and boys of the Cardon and two children of Orem; Gaye and Ken Chris ward are reminded of a general Priesthood meeting which will be held on Sunday morning, April 13 at 7:45 a.m. at the Hyde Park Chapel. No Priesthood meeting will be held in the Benson Ward on that morning. Anyone desiring a ride is urged to contact their Priesthood leaders or a member of the bishopric, who will be happy to furnish transportation. Cami and Chad Clark spent the weekend with their grandmother, Lucy Cooper in Smithfield while their parents, Carla and Ralph Clark spent the weekend in Elko, Nev. They were accompanied by Vanoy and Bonnie Godfrey of Smith-- ' field. visiting on Sunday at the homes of their parents, La-Rand Don Godfrey and Ruth and Douglas Clark. Shane and Holly Parker, children of Shauna and Kent Parker of Providence spent a week visiting with their grandparents, LaRaine and Mrs. Mayme Griffin returned home Monday after spending a week in Woodland Hills, Calif., where she visited with her granddaughter and family, Dr. and Mrs. Robert Hansen. She accompanied her daughter and Edna and Rex Thompson of Logan, parents of Mrs. Hansen. Jed and Tad Griffin of Providence and Bryon and Brett Hugie of College Ward rode their bikes out to Ciarkston on Thursday to visit with Jed and Tads grandparents, Bessie and Brigham Griffin. Jed and Tad are the sons of Grace and Dennis Griffin and the Hugie boys parents are Mr. and Mrs. Rex Hugie. They returned home on Friday. Bessie and Brigham Griffin were Saturday overnight guests at the home of their son, Terry and Kayleen Griffin and family in North Logan. Marilyn and Curtis Godfrey and son of Logan, were ae son-in-la- Charles Pearce and Rangna and Paul Clark while their parents flew to Boston, Mass., to visit and witness the blessing of the first child, a daughter, born to their brother and Mr. and Mrs. Paul Parker. They were accompanied by Kent and sister-in-la- Pauls mother, Mrs. Melna Parker. Mr. and Mrs. Pearce took Shane and Holly to the Salt Lake Airport on Sautrday to meet their parents. LaRaine and Charles Pearce, Bonnie and Dwight Pearce, accompanied by Shauna and Kent Parker and family attended .the Wilbur Pearce family reunion held on Sunday at the home of Mr. Jenkins Hold Family Dinner by I.rda Sutherland tiansen of Logan, and the immediate family. The young people of the ward enjoyed a record hop on Friday evening at the ward cultural hall, under the direction of Landell and Lois Ballard, leaders of the Aaronic Priesthood and Olaque stood with the couple in the single ring ceremony. The children of Mrs. Buttars, Gail, Kami and Jamie, attended along with Mr. and Mrs. Arlin Buttars and children, Lewiston, parents and family of the groom, as well as 30 friends and relatives of the couple. Cake and punch were served following the ceremony. The couple is residing in Logan. This was a very excellent program and enjoyed by 23 club members and guests. Refreshments prepared by Nancy Griffin and Norma Christensen were served by the presidency and hostesses. The guests were Mr. and Mrs. O. W. Hyde, Erma Griffin. Archie Jenkins, Margret Barson, Joyce Jenkins. They flew to Kauai and spent a day touring where they saw and enjoyed a boat ride on the Wailua River up to Fern Grotto where lots of movie stars have been married. They saw the museum and the City of Refuge. Two days were spent on Hawaii Island where they saw the Black Sands Beach, Louis Berg, 100 and Valoice Griffiths of Ciarkston and Mrs. Christina Frank, Providence. They went to Laie to visit Mrs. Watts daughter and husband, Marcia and William Ohmei and their 11 month old son, Patrick. ia and William Both achers. In their crowded itinerary the ladies got to tour the island of Oahu going by boat to take the cruise of Pearl Harbor and also went out to see the monument of the cently returned home from the Korea mission, Tamara is the daughter of Mr. and Mrs. Lowell Griffiths, of Dugway, and Nile is the son of Mr. and Mrs. Weldon Griffiths of Shelley, Idaho. The concluding speaker was Elder Kim Griffiths. Valerie Clark, daughter of Shirlene and Denzel Clark, was with the Logan LDS Institute choir that sang in conference on Saturday. A large group of relatives and ward members attended the welcome home testimonial on Sunday in honor of Kim Griffiths, son of Marilyn and DeMar Griffiths, who has ' returned - home from New Mexico-Arixon- a Spanish mission. Bishop Udell Godfrey presided and LeRoy Goodey conducted.
