Vitamin tables show that a serving of green broccoli has 4,000 units of vitamin A, compared with non for white cauliflower which tastes much the same but is far more difficult for amateurs to grow successfully, while having a much shorter Harvesting harvest. These are very good reasons why broccoli has taken the place of cauliflower in many Victory gardens. In addition, many prefer the flavor of broccoli. It is a cousin of the cauliflower, and is one of the vitamin rich green vegetables. It excels cauliflower in Vitamin C, and has only slightly less Vita- min B. While it grows all summer vigorously, its best crops are produced in cool weather, in the early spring and summer, and in the fall. For an early crop, plants may be started indoors and set out in the garden as soon as frost danger is over. For a late crop, sow seed in the garden about June 1. It is also possible to sow seed in the garden when the very first crops are put in, and grow them all summer. Plants should stand 18 inches apart in the rows, and the rows at least 2 feet apart.
