Prepare two table spoonful of butter and flour mixed together. Add a little of a quart of milk, stir until well blended, then add the remainder and heat slowly Beat the squash until light and mix with the other Ingredients. Heat very hot and serve at once. Mock Bisque. Scald one quart threefourtbs of of milk with a cupful of bread crumbs, one small onion stuck with six cloves, a sprig of parsley and a bit of bay leaf. Remove the season lugs and rub through a sieve. Add two teaspoonfuls of sugar, two cup fuls of canned tomatoes and cook fifteen minutes.
