Place over boiling water and stir until dissolved. Add sugar, salt and mustard, stir until blended. Cool. Drain and flake salmon; stir into gelatine mixture with celery. Fold in whipped cream or whipped evaporated milk. Turn into individual molds; chill until firm. Unmold and serve with mayonnaise or Cucumber Cream Dressing. If desired, serve with tomato slices and salad greens. YIELD: 4 to 6 servings.
