Knavel looks for new recipes Good Cooks Shes busy homemaker ' by Flo Munson This week our spotlight falls on an exceptionally good cook in Brigham City. Mrs. Goerge R. (Linda Billings) Knavel was born in Santa Maria, Calif. She came to Brigham City with her parents when she was only seven years of age. She is a graduate of Box Elder High school and LDS seminary. Her husband is manager of Billings Oil company in Perry. He drives a tanker and supplies stations. The Knavels have three daughters and two sons Jana, 16; Chad, 10; Amy, 8; Jill, 6, and Ryan, Linda also tends two neighbor children in her home. I found Linda to be musically inclined. She sings alto and participates in trios, in concerts, in church ace chorus tivities, etc. She was a member of a for nine years. She was also past president of the Cecelian Music society. Linda has served in all church activities in the ward as choristor, teacher in Primary, active in Relief society and is proud of her Golden Gleaner award. Presently she serves on the board of directors for the Community Theater. Reminiscing, she recalled, I had one of the leading roles in the theaters first production of Oliver. four-stak- Plays Softball Playing softball with the city league keeps her trim. When friends ask how she finds time for so many activities she smiles and answers, Its easv, I iust turn off TV and I find plenty of time." Linda and her daughters have a fabulous collection of dolls which they have displayed in a lovely tall glass case. It all started when my brother who was on an LDS mission sent us dolls from England, Holland and Germany, she said. Since then we have dolls from Australia, Vietnam, Greece, India, Spain, Thailand, Old Mexico and Iceland. We have several more coming from Samoa, Ireland, Japan and Puerto Rico. Its a fun hobby and exciting to examine how each one is dressed in their native costume, etc. Loves to Cook I love to cook," Linda went on. I always cook in large quantities. I am always looking for new, tempting recipes. Our family loves taco salad. We have lots of picnics in the summertime and family parties. For relaxation the Knavel family are fond of going to Liberty park and Hogle Zoo. For a summer treat try Lindas Taco Salad. TACO SALAD CASSEROLE Fry and chop 2 lb. ground beef, 1 onion, In large saucepan mix and warm 2 cans tomato soup (do not add water) 1 can enchilada sauce, grate 1 lb. cheese (mild) dip in sauce, to corn tortillas (small) Fill with meat and handfull of grated cheese. Line cake pan with rolled tortillas and sprinkle chopped onions and remaining cheese and sauce over all. Cover with foil. Bake at 350 degrees for 40 min. 8 A 12 meant that the lawn didnt get mowed, and then it rained all week so that the grass looked like a pasture. A neighbor boy was paid for a mowing of the front yard so that the neighbors wouldnt become too disturbed, but the price of beef made the family give serious thought to raising their own as a backyard mowing machine. Since Mrs. Society Editor couldnt get her children to work all morning or the lawnmower to work all afternoon, despite threats and mechanical means to the respective parties, the grass became deeper and deeper. The poor little handmower had a new bolt placed in its sagging handle, but still stopped and choked on long grass so that hubby was the only one with the muscle enough to push it through the lusher parts of the lawn. The rest of the family followed with rakes, and then to get all the grass that had been left in clumps as the long grass pushed it down. It looked so pretty and manicured, and dinner on the patio convinced us all that it was definitely summer. Alas, it has grown rapidly in this week of warmth and summer showers and the power mower is still sulking and refusing to start but the children have been convinced that the hand-mowwill work easier on the shorter grass and even easier when it has been sharpened. So far the only yield has been the perennial rhubarb and asparagus, coupled with onions left in the ground all winter and some radishes that are already almost to the marble stage. The boys are rejoicing at how hot the onions and radishes are, and are tending two pumpkin plants that were almost lost in the freeze but are recovering well enough that they have visions of huge jack olanterns already dancing in their heads. ENCHILADA The Ice Age has passed, and surely summer has finally arrived in Box Elder County. Wed begun to think those scientits who are so worried about the growth of the polar ice caps were a bit slow in their predictions, and that soon the Caribou or a resurrected hairy mastadon might descend from the northlands. The signs are pretty sure, though, that summer has arrived. The swimming pool is open and the kids are sporting sunburns, hubby is out hiking mountains, and the garden crops no longer have to be covered by the familys wide mouth jars and paper hats. Even the lawnmower has its annual attack of refusing to work until some negotiation is made concerning its future. It made one mowing of the front yard, twice around the perimeter of the backyard, and then sputtered to a stop and has refused to budge since. Of course, a friend reminded the family that a mower cant last forever but the family still hopes it can be revived. Otherwise, the hand mower will have to be used since hubby has decided that its healthier for the family anyway and cheaper, too! is for DADS RY wihmium tested for purity isd geim ation. 1 lb. size, fog ,$9 |
