Much of this is due to the professional quality of the cheese makers and the dairymen who provide the i aw milk. Cheese making is more of an art than a science. One of their new ventures is producing a low fat, low calorie cheese that has traditional taste. Another local cheese maker is Chappel Cheese in Loa. James Chappel said he is pleased with the cheeses they are making and is even more delighted with the support he receives from the distributors and brokers who help him move his products. He is one of the few here who make a waxed loaf of cheese. Most of his cheese stays in Utah but he hopes to expand his manufacturing facility and increase production. His is held manufacturing mostly to cheddar and Monterey jack. |
