Salt City has many pushing, enterprising, business and professional men, whose names are seldom if ever seen in the society columns of the daily papers, for the reason that their time is too much occupied with substantial business affairs to cultivate the acquaintance of the society editors. Nevertheless they are among our most worthy and substantial people, and in order that the public may know something about this class of men, and what they are doing, and the many enterprises they are promoting, Thk Bi:k has concluded to devote some space from time to time to this subject. We believe the great mass of the public have little idea of the work that is being done right in our midst even in these dull times, and the money that is being spent in worthy enterprises which are bound to benefit the public as well as the men behind them. ke used in the state. Perhaps few business houses in the city.can boast of such growth as the Palace Meat Market on South Main. During the past two years its success has been almost phenomenal, until it is now the largest wholesale and retail meat establishment in the state. Its growth has been interesting, and demonstrates the business rule that upon the push and business ability of the promoter depends the success of the enterprise. Mr. J. M. Marriott, the proprietor, came to Salt Lake in June, 1889, and engaged in the meat business that same fall with S. S. Dickinson, under the firm name of S. S. Dickinson & Co. In 1891 the firm moved into the present quarters at 265 South Main, Mr. Marriott assuming charge, and from that time on business began to grow, though it did not assume its present enormous proportion until in iSqandqS. The enlarged family trade soon made necessary more commodious facilities for handling. A large refrigerating plant was installed, but it soon gave way to artificial refrigeration, the only system of its kind space. Anhydrous ammonia is the basis or principle of the invention, the ammonia being in liquid form, and placed in great iron tanks. About the only machinery used is a compressor pump for replenishing the feed pipes to the cold storage rooms. It is sufficient to say that since the introduction of this new system, the business of the Palace Market has grown until it handles nearly 30 per cent of the entire meat business in the city. The retail department, on Main Street, is most complete in every detail, handling the enormous family trade with dispatch and satisfaction. The wholesale department caters to large consumers, and is already assuming proportions which will necessitate enlarged facilities for handling the business. The specialty of the house is to pay the largest market prices for live stock, thus securing only the finest. The importation of meats is also a feature which is attracting the attention of the consumer. With the recent introduction of artificial refrigeration at the expense of many thousands of dollars, the public has been given the most system of preserving meats, and the magnificent patronage afforded The Palace indicates that the efforts of Mr. Marriott have been up-to-da- J. Artificial refrigeration is perhaps the only safe system for the pren servation of meats.
