It seems as if I just took our Christmas tree down last month, and we have just finished eating the Christmas fudge. Needless to say I am not prepared for the Easter Bunny to visit our home this year. I am not prepared to make an Easter feast, let alone color an Easter egg. Regardless if I am ready or not, this holiday is approaching ap-proaching quickly, and I will need to be ready. I enjoy watching our children chil-dren hunt for Easter eggs. I enjoy en-joy buying our boys Easter ties and our girls Easter dresses. But this year I am looking forward for-ward to making a small feast of Cornish hens for my family. Here is a recipe and a few hints and tips to help your Cornish Cor-nish hens turn out beautifully for your Easter feast. A Cornish hen is sometimes called Cornish rock. Remove the giblets, wash and pat dry before wrapping in an airtight package with all air removed. Properly frozen hens can be stored in the freezer for six to nine months. Markets that do not carry fresh game hens will carry frozen ones in freezer cases, usually sold in pairs, by the turkeys. You will not go wrong by buying these hens. They are easy to cook, and even easier to eat. Toss a salad, throw a baked potato in and enjoy this delicious meat for your Easter Feast. I am sure that after this weekend I will be carrying a couple extra Cornish hens on my thighs, but I will enjoy putting put-ting them there, I am sure.
