Cornmeal pancakes ar cousins of tortillas, so popular in Mexico and our own southwest. The sausages that nestle neatly inside and the applesauce thats spooned on top came with our forebearers from northern Europe. And the Log Cabin syrup that adds the crowning touch is as the leisurely Sunday brunch. Youll want to serve the syrup hot to go with these special pancakes. Warming syrup is an easy job if you have a heatproof carage. If not, simply heat syrup in a small saucepan and serve from a pitcher. For the times when plain pancakes or waffles are your breakfast choice, prepare Orange Sherry Sauce as a special treat. Grated orange rind and a bit of sherry wine blend with the pancake and waffle syrup for distinctive flavor. Cornmeal Pancake Roll Ups flour cup sifted 4 teaspoons double-actin- g baking powder 1 teaspoon salt 1 cup yellow cornmeal 2' 2 cups milk 1 egg, well beaten melted 4 cup shortening, Hot cooked link sausages Applesauce Pancake and waffle syrup 1 Sift four with baking powder and salt. Mix in cornmeal. Combine milk, egg and shortening; add gradually to the flour mixture, stirring only until smooth. Using U cup batter for each pancake, bake on hot griddle, turning to brown both sides. Place a sausage on each pancake, roll and serve with applesauce and syrup. Makes about 16 servings. (General Foods Product Used: Log Cabin syrup.) Orange Sherry Sauce butter or margarine tablespoon cornstarch '4 cup 1 cup pancake and waffle syrup one third cup sherry wine '4 cup orange juice 4 teaspoon grated orange rind Melt butter in a small saucepan; blend in cornstarch. Stir in remaining ingredients. Bring to boil over medium heat, stirring constantly. Reduce heat and simmer 2 or 3 minutes, stirring occasionally. Serve warm or cool over pancakes or waffles. Makes about I1, cups. (General Foods Product Used: Log Cabin syrup.) 34 Hearty Eating on a Budget BY CAROL SHAW Beacon Writer This is the season of the year when a lot of us wish we hadnt have been so generous with ourselves during the past two months. We start looking for dishes that taste like they are sinfully rich, but are actually stingy with the calories, while not skimping on nutrition. If it is low cost, so much the better! Janice Hubbard We mothers have the patience of saints. No one is more selfless, kind and long suffering than mothers. I realized this when my eldest began Drivers Education in high school. Suddenly he could find nothing good to say about my driving. He, of course, still felt that I should chauffer him hither and yon, but he wanted me to know that he took his life in his hands each time I did. It was a constant stream of Slow down! Youre following too close. You didn't come to a full stop. Do you know how many people are killed in traffic accidents each year? Most serious accidents happen within 10 miles of your own home. He was a virtual encyclopedia. He frequently had the gall to be laughing with his friends about female drivers, most particularly his mother, and then ask, Can you run us down to the mall? Id love to, Id answer. But I dont feel that I should risk your life like that. I would never forgive myself if anything happened to you. Aw come on, Mom, he would say. For six months the tune heard continuously around our house was the Million Mile Club. This is a select club for those who could drive one million miles without an accident of any kind. The goal is to be so alert that you drive one million miles and never even slam on the brakes. He knew with certainty that in a few years his name would be engraven on the golden roll of the Million Mile Club. With the memory of an elephant, he enumerated each ticket I had received in a twenty year span. His memory stretched back beyond his birth. He was uncanny. He could also itemize each California stop or any other tiny infraction. He, always in a spirit of helpfulness, gave me endless driving tips. He marveled at the tolerance of his father in allowing me to drive , especially a nice car. He personally thought I should be limited to a clunker. If something terrible should happen to me, why ruin a good car? His list of my errors grew. I stopped too quick, followed too close, broke the speed limit, didnt allow for existing road conditions. The one skill I possessed seemed to be that I turned the key in the ignition switch rather well. I started the car with som success. At last the day arrived. He was to take his drivers test. I that boy was a martyr was lucky enough to drive him to the test range. He passed. He drove me home and left to run an errand. It grieves me, breaks my heart to tell you that he had an accident. He ran into a parked car and dented the right rear fender within thirty minutes of getting his license. So much for the Million Mile Club! Henry SViancini to give concert By any set of standards, Henry Mancini is regarded by his peers and music critics as one of the giants of the popular music field. The talents of the prolific will be combined with the music of the Utah Symphony Feb. 4 at 8 p.m. in the Weber State College Dee Events Center. The evening concert is being sponsored by the Associated Students of Weber State. Tickets are $5.50, $6.50 and $7.50 and are now on sale at the Dee Events Center ticket office and at all ZCMI stores in Ogden, Salt Lake City, Logan and Provo. Groups purchasing 20 or more tickets are also eligible to receive a $1 discount per ticket, said Chris Davis, ASWSC cultural vice president. WSC students also receive a $1 discount per ticket. Mr. Mancini has been honored by the Academy of Motion Picture Arts and Sciences with 13 Academy pie sheel or onto a pan lined with crushed graham cracker crumbs. Garnish with fresh or canned fruit. These students prepared an essay on oral hygiene and then were interviewed and judged by a panel consisting of a dentist and a Weber y pi - it V- - - au" -- Dental College Hygiene Instructor. The contestants w'ere judged on smile, general appearance, h: mi poise, quickness of smile, essay and the general knowledge of dental hygiene. The Miss Smile winners competed on a region level with other high school, on Jan. 14 and Lynnelle Grant was second runner up in the region.
