All of it deserved. But what many of them fail to mention is the fact that Deer Valley’s executive chefs, pastry chef and director of food and beverage have been with the resort since the mid-1980s. Together they have maintained the sophisticated food and wine standards that marked the resort's beginnings when the respected James Nassikas of San Francisco’s old Stanford Court Hotel first laid down the master culinary plan. Since that time, the resort's menus, under the guidance of food and beverage director Julie Wilson, have evolved as tastes and styles have changed and more fine local produce and handcrafted food items, such as cheeses, have become available. Letty Flatt, in her own words, is “Passionate about eating.” While that doesn’t stop her from whipping up wedding cakes that are pure visions of buttercream and art - or from turning out perfect pizza crusts and savory foccacia, and much more - it does affect her outlook. Part of healthy eating is in demanding integrity and quality in the ingredients you use. If more Letty says these muffins are for people who are serious about getting plenty of fiber from a low-fat, satisfying source. They're easy to make, once you assemble all the ingredients - and the final result is a batch of chewy, tasty muffins that will make you feel like you’re doing something good for yourself.
