Be-si- es Sauce Tartare This sauce adds greatly to the appetite appeal of fried oysters, scallops, smelts and many other varieties teaof fish. Mix together teaspoon salt, spoon mustard, few grains cayenne an done teaspoon powdered sugar. Add yolks of two eggs. Stir until thoroughly blended, setting bowl in pan of ice water. Add lf cup drop by drop at first, olive oil, stirring with wooden spoon or wire whisk. Dilute very gradually with one and a half tablespoons vinegar as the mixture thickenes, at the same time adding the oil more rapidly. Keep in the refrigerator until just before serving. Then add one tablelf spoon tarragon vinegar, shallot chopped fine, and tablespoon each of finely chopped one-ha- lf one-ha- lf one-ha- one-ha- one-ha- lf mmm mmmmimaam HOUSE Lawn Hose, Spray Nozzles and Garden Tools H-i- ao All Types FLOUR Fish Meal v OYSTERS ON TOAST 1 pint oysters 3 tablespoons butter 2 tablesspoons flour xk teaspoon salt Few grains cayenne 1 egg yolk 1 cup thin cream or milk Clean oysters, heat to boiling" point, and drain. Cook butter, flour and cream 5 minutes. Add oysters and egg stir until thoroughly hot, and serve on buttered toast or crackers. Two tablespoons chopped mushrooms will greatly improve the dish. BREAKFAST FRUIT HASH Oranges cut into small pieces may be combined with other fresh fruits to enin almost endless varieties liven the breakfast menu. Oranges and bananas, oranges and strawberries, oranges and red raspberries, oranges, and apples, oranges and fresh pineapple are suggested combinations. Other fruits in season may be used. BAKED ECONOMY Into a pan put slices of raw peeled potatoes and a little pepper. Then a layer of uncooked, well-butter- sliced ham. Add another layer of potatoes and ham and pour on thin cream sauce (1 tablespoon flour, 1 tablespoon butter, to 1 cup milk). Sprinkle bread crumbs on top and bake in a moderate oven until brown and potatoes are well done. Serve not Just enough ham can be used to give Modern type without the extremes.
