A New York restaurateur, on the closing of his famous place a few days ago, said: "Restaurants don't pay; eating places pay, but not restaurants." It was not against the prohibition law that thtB man complained. Rather it was against the changing clientele which had robbed his place of Its atmosphere of gentility, and elegance. A few years ago, New Yorkers of the old school and quiet visitors from this and other continents, occupied with selective care the tables at the famous restaurants. They selected their food with thought sometimes They ate epicurean In its degree. leisurely, and they sought no entertainment other than that which their own and their friends' conversation and culture could afford. But this generation was driven from the reeturants. There came the reign of cafes. Gourmands replaced epicures. High appetites succeeded Noise and excitement good tastes. Jazz banished quiet and 'culture. bands were required to compete with the diners. The dance craze came, and the modification of the dance from grace to gyration to enable flat, tooted persons to participate on equal terms with real dancers The overhead of the Jazz cafe was naturally tremendous. The time arrived when decision was necessary on the sacrifice of fine selection of foods the careful service and the good cook ing, or the giving up of the new Jazz outlays. The lnfor mation is given out that the city of Gllroy, California, after many years experience in operating its electric plant has recently sold out to the Coast Counties Gas and Elecrtic Company of San Francisco. The article states, that on Nov 9th, of last year, the City of Gllroy, voted Almost unanimously to sell the pro perty to the highest bidder for cash. The significant fact which caused the people of Gllroy to come to this decision to sell.
